Just because you are eating clean and healthy, it doesn’t mean it has to be boring and look like you are eating salad with chicken thrown on it. One of the things we do is take the most common food combinations and create an entirely new dish so that we trick our brain into believing we are eating something else. Sometimes, depending on the dish, we break out the chopsticks instead of forks. 

Per serving:

2 cups spinach

¼ cup chopped red onion

2 tbsp balsamic vinaigrette

¼ chopped tomatoes

2 tbsp of hummus

5oz of chopped grilled chicken

This is the perfect meal for someone who is like me…not a chef. 

Lightly wilt the spinach in a heated pan with a little olive oil. This should only take 2-3 minutes. You do not want the spinach to cook down. Take the remaining ingredients, except for balsamic,  and mix together in a bowl. Add spinach to a plate. Use a 1 cup measuring spoon to place mixture on top of spinach. Drizzle with balsamic vinaigrette. Serve.
